Prepare the Mushroom Chocolate (or Chaga Chocolate)1/2 cup cacao nibs1 tablespoon maple syrup1/4 cup water1 cup flour1/3 cup cocoa powder1 tablespoon ground cinnamon1 tablespoon nutmeg1/8 teaspoon ground ginger1/16 teaspoon ground cloves1/32 teaspoon ground nutmeg2 tablespoons waterFor the chocolate, combine cacao and maple syrup in a bowl and whisk until smooth.
Set aside.1/5 cup cocoa butter or margarine1/6 cup flour, plus more to add for dusting1/10 cup cocoa or powdered sugarFor the mushroom chocolate, melt butter in a saucepan over medium heat.
Add flour, cocoa powder, and salt.
Bring to a boil, stirring occasionally, then reduce heat and simmer for 10 minutes, or until the flour is well-combined.
Remove from heat and set aside.2.
Prepare The Mushroom Chocolate Sauce1 cup chocolate chips1 cup chopped chocolate1 cup cacajasweet chocolate chipsFor the mushrooms, mix chocolate chips and cacajanas in a small bowl.
Whisk the chocolate until well combined. Add cacajásweet and mix until well blended.
Add remaining chocolate chips.2/3 of the chocolate sauce is reserved for garnishing the mushroom.3.
Chill the mushrooms in the refrigerator.4.
Preheat the oven to 375 degreesF (180 degreesC).5.
Prepare Chocolate Filling5 tablespoons chocolate chips3/4 teaspoon cinnamon1/1 teaspoon ground allspice1/12 teaspoon ground coriander1/7 teaspoon salt1/20 teaspoon pepperFor the cheese, melt the butter in the bowl of a stand mixer.
Add the cocoa, cinnamon and salt, and mix well.
Add allspices, corianders, salt and pepper.5/8 of the cheese mixture is melted.6.
Dip the mushrooms into the chocolate filling.
Add chocolate chips, and season with salt and spices.7.
Bake the mushrooms for 25 minutes or until golden brown and the cheese is melted and bubbling.
Remove the mushrooms from the chocolate and set on a wire rack to cool.8.
To serve, sprinkle the mushrooms with chocolate chips before eating.
