This mushroom fried tofu is a perfect comfort food.
The tofu is crispy, delicious and healthy.
This mushroom tofu recipe is vegan, gluten-free, low-carb, low fat, dairy-free and soy-free.
Ingredients 1 medium head cauliflower, sliced 1 onion, diced 1 carrot, diced 2 cloves garlic, minced 1 red bell pepper, diced salt and pepper, to taste salt and fresh ground black pepper, fresh ground pepper to taste, fresh cracked black pepper to add 1-2 tbsp coconut oil, or vegetable oil for frying (I used canola oil for this) 3-4 green onions, diced 4 cloves garlic cloves, minced, optional 1 red chili pepper, minced or to taste 1 tsp chili powder 1/2 tsp cumin powder 1 tsp oregano 1/4 tsp salt, or to season salt, to season rice wine vinegar, optional (optional) 3 tbsp extra virgin olive oil 1 tsp minced garlic salt and freshly ground black Pepper for garnish Instructions Combine cauliflower and onion in a medium bowl and toss with the garlic and peppers.
Season with salt and a pinch of pepper if desired.
Heat olive oil in a large skillet over medium heat.
Add the onion, garlic, and peppers and sauté for about 1 minute, or until the onion is soft.
Add in the coconut oil and stir to coat in oil.
Add cauliflower back to the pan and cook for about 6 minutes, or till the cauliflower is cooked through.
Stir in the remaining ingredients and cook another 3 minutes, adding more oil if necessary.
Stir well. Serve hot.
